Burrito Pie

Burrito Pie


Ingredients:
2 lbs ground beef
1 medium onion
2 teaspoon minced garlic
2Tablespoons taco seasoning
1 can olives (opt.)
1 (10oz) can diced tomatoes with green chile peppers
1 (16oz) jar taco sauce
2 (16oz) cans refried beans
12 (8inch) flour tortillas
3 cups Colby cheese


Directions:
1. Preheat oven 350 degrees F
2. In a large skillet brown ground beef, onion, and garlic. When meat is cooked add taco seasoning, diced tomatoes, taco sauce, and beans. Simmer for 15 minutes.
3. In 9x13 pan spread meat mixture top with two tortillas, then continue with meat, cheese, tortilla, etc... ending with cheese.
4. Bake for 20 to 30 minutes or until cheese is slightly brown and bubbly.


Serve with sour cream and avocado if desired. 


*I froze leftovers in smaller containers to heat up for a quick lunch.
