Chicken Taco Soup

Here is the same ol' taco soup, but with chicken.


Chicken Taco Soup
Ingredients
4 boneless chicken breasts, cooked and chopped (about 3 cups)
1 small onion, chopped
1 pkg. taco seasoning mix
1 can stewed tomatoes
2 cups water
2 (8oz) can tomato sauce
1-2 cans drained corn
1-2 cans kidney beans
1 can garbanzo (chickpeas) or Northern beans


Directions
1. Mix all ingredients. Boil and simmer for 15 minutes, or cook 2-3 hours in crock pot for thicker soup.
Serves 6


**Serve with tortillas, cheese, sour cream and avocado; if desired.


This can be a pretty healthy soup. It's 8 WW points per serving without the extras.

Chicken Marinade

My friends and I did a recipe swap a few summers ago and it was great. I pulled out some of those recipes and got this one from Michelle. Everything she makes is delish, so I knew it would be good.


Chicken Marinade
Ingredients:
1/2 Cup soy sauce
1 Cup Sprite or 7-UP
1/2 Cup oil
Chopped parsley (I used dry instead of fresh and it was still good)
Chicken breasts (I used 3 really big ones)


Instructions:
Marinade overnight and grill




**I put everything in a ziploc bag and marinaded it overnight and then put it in the crock pot for 6-8 hours on low. Loved it!

Grilled Lemon Herb Pork Chops

I love these meals that you can dump in a bag. They can be used right away or put in the freezer.

Grilled Lemon Herb Pork Chops
1/4 C. lemon juice
2 Tablespoons vegetable oil
2 Tablespoons garlic
1 teaspoon salt
1/4 teaspoon dried oregano
1/4 teaspoon pepper
4-6 boneless pork chops
Directions:
1. Place everything in a large resealable bag and refrigerate at least 2 hours or overnight.
2. Grill chops over medium to medium low heat (about 7-10 mins per side). You can use marinade to baste chops as they cook if desired. Discard leftover marinade.


*I will put everything in a bag and freeze it. The night before I just put it in the refrigerator to thaw.


*This is also a really healthy recipe. It's only 3 WW points per chop.
