Breakfast Casserole
1 pound bacon, diced
1 medium onion or 1 Table onion powder
6 eggs
4 cups shredded hash browns
2 cups Cheddar cheese
1 1/2 cups cottage cheese
1 1/4 cups Swiss cheese
Directions:
1. In a large skillet, cook bacon with onion (or powder) until crisp; drain. Combine rest of ingredients in a large bowl; stir in bacon. Transfer to a 9x13 pan
2. Bake uncovered at 350 degrees for 40 mins. Let stand 10 minutes before cutting.
